soup of legumes and cereals is a first course very simple to prepare, healthy and nutritious. Enriched with vegetables and herbs, the soup of legumes and cereals is ideal to eat very hot during the cold winter days. To prepare this soup, I recommend that you use packages of mixed vegetables and cereals that are sold ready-made in supermarkets. Ingredients
clove garlic 2 laurel leaves
Mixed Vegetable broth 1 lt

pinto beans, white beans, lentils, peas and grains for a total of 500 g
3 tablespoons extra virgin olive oil
Parmesan cheese into small pieces 2 medium potatoes
200 g tomatoes 1 sprig rosemary

Preparation Soak cereal in cold water the night before. The next day, drain them thoroughly, then prepared with chopped onion, garlic, celery and carrots. Sauté the mixture in three tablespoons of olive oil, then add the drained vegetables and cereals, stir for a minute and then cover with vegetable broth. Then add the tomatoes, previously peeled and cut into cubes. Put the cheese into small pieces. At this point, also joined the bunch of herbs, bring to boil the soup, season with salt and then cover the pan with a lid: cook slowly for one hour, adding, if necessary, another vegetable broth for the soup to be with the right amount of liquid. Half an hour before the end of cooking, add potatoes, peeled and cut into small cubes are cooked, remove the bouquet garni, season with salt if necessary, add a little oil and serve.
